1. Kiwi Cooler

Ingredients:

  • ⅛ Cup Granulated Sugar
  • 3 Tbsp Lemon Juice
  • 300ml Soda Water/ Sparkling Water
  • 2 Kiwi Fruits
  • 120ml Vodka (optional)
  • Crushed Ice

Garnish: Thinly sliced Kiwi fruit

Serves : 2

Method:

In a saucepan, mix sugar, 1 cup water and peeled and roughly chopped Kiwi fruit and cook till the sugar dissolves and the fruit softens and attains a pulpy consistency. Remove from heat and set aside to cool. Put this mixture in a blender jug and blend it until smooth. Strain this mixture and mix in the lemon juice. Fill 2 tall glasses with crushed ice as desired. Pour this kiwi concentrate into the glasses and top it up with the Soda/Sparkling water and vodka (if using). Garnish with sliced kiwi. Serve immediately.

2. Tangy Tamarind Cooler

Ingredients:

  • A lemon size proportion of Tamarind
  • 3 Cups Water
  • 3 Tbsp Granulated Sugar
  • 1/3 tsp Black Salt
  • 1/3 tsp toasted and crushed Cumin Seeds 
  • Crushed Ice

Garnish: Thinly sliced Lime

Serves : 2

Method:

Cook the tamarind pulp in boiling water until it is soft and starts to disintegrate. Using a sieve, strain the tamarind water and set aside to cool. Mix in the remaining ingredients in the tamarind water and stir well. Adjust the salt and sugar as per taste. Serve in tall glasses topped with thinly sliced limes. Serve immediately.

3. Apple-Pie Shake

Ingredients:

  • ½ cup Brown Sugar
  • 2 inch Cinnamon Stick 
  • 2 cups Apple Juice
  • 1 scoop Vanilla Ice-Cream
  • ½ teaspoon Lemon Juice
  • Crushed Ice

Garnish: Thinly sliced Apples, Cinnamon Powder, Crushed Shortbread Cookies.

Serves : 2

Method:

In a saucepan, mix sugar, ½ cup water and cinnamon stick and cook till the sugar dissolves and attains a syrupy consistency. Strain and set aside to cool. In a medium sized blender jar, add apple juice, lemon juice, vanilla ice cream and sugar syrup and some crushed ice. Blend until the mixture is frothy and smooth. Pour into tall glasses. Garnish with sliced apple and generous sprinkling of shortbread cookies. Serve immediately.

4. Tropical Punch Colada

Ingredients:

  • 1 cup Pineapple juice
  • ½ cup Guava Juice
  • ½ cup Coconut cream
  • ½ cup White Rum (optional)
  • Ice cubes

Garnish: Fresh Mint Leaves

Serves : 2

Method:

Chill all the ingredients separately. Pour the juices and coconut cream in a pitcher along with rum (if using). Fill 2 tall glasses with ice cubes and pour the drink over. Garnish with mint leaves. Serve immediately.

5. Pomegranate Caipriroshka

Ingredients:

  • 1 large Lemon cut into wedges
  • 12-14 fresh Mint Leaves
  • 2-4 Tbsp powdered sugar
  • ¼ Cup fresh pomegranate kernels
  • ½ Cup pomegranate juice
  • 120ml Vodka (optional)
  • Crushed Ice

Garnish: A dash of Grenadine and wedge of Lemon

Serves : 2

Method:

Place the lemon, mint leaves, sugar and pomegranate kernels in a stainless steel jug. Roughly crush with a wooden pestle until semi-crushed. Add the pomegranate juice and serve the drink in an old fashioned tumbler with crushed ice. Garnish with mint leaves and lemon wedge. Serve immediately.
